Select and cut an acorn, butternut, confection, etc. squash in half. Remove seeds and place squash cut side down in a baking dish with 1/2 inch of water. Bake at 400 degrees for about 30-40 minutes, depending on the size of the squash. Serve with butter and local maple syrup.
If you're feeling ambitious, while the squash is cooking, clean the seeds and arrange them on a baking pan. Drizzle with olive oil and salt and stir. Once the squash is done, put the pan of seeds in for about 10-15 minutes as the oven cools. The oven stays warm long enough to roast the seeds without having to keep the oven on.
